Light, vibrant, and packed with brain-friendly nutrients, this Mediterranean Tofu & Quinoa Bowl is the perfect combination of flavor and function. With fluffy quinoa as the base, it features protein-rich tofu, juicy cherry tomatoes, and creamy avocado—all topped with a drizzle of olive oil and a sprinkle of fresh parsley. Whether you're fueling up for a productive afternoon or looking for a nourishing lunch, this easy-to-make bowl delivers a satisfying and wholesome boost.
Ingredients:
1 cup quinoa
2 cups water
1 tablespoon olive oil
200g firm tofu, cubed
1 cup cherry tomatoes, halved
1 avocado, sliced
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Rinse the quinoa under cold water and drain well.
In a pot, combine quinoa and water. Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the water is fully absorbed.
In a skillet, heat the olive oil over medium heat. Add the cubed tofu and cook until golden brown, which should take about 5 to 7 minutes.
Once the quinoa is cooked, fluff it with a fork. Season with salt and pepper to taste.
In serving bowls, layer the quinoa, sautéed tofu, cherry tomatoes, and avocado slices.
Garnish the bowl with fresh parsley. Serve warm and enjoy!
