Ingredients:
400g of quinoa
500g of salmon fillets
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of paprika
1 cucumber, diced
200g of cherry tomatoes, halved
100g of Kalamata olives, pitted
1 red onion, thinly sliced
Juice of 1 lemon
Fresh parsley, chopped to garnish
Salt and pepper to taste
Instructions:
Rinse the quinoa under cold water and cook it according to package instructions. Once cooked, set aside to cool.
Preheat the grill to medium-high heat. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture onto the salmon fillets.
Grill the salmon for about 5-7 minutes on each side or until it flakes easily with a fork.
In a large bowl, combine diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives. Add the cooled quinoa to the salad mix.
Drizzle lemon juice over the quinoa salad and toss to combine. Adjust seasoning with salt and pepper if needed.
