Mediterranean Quinoa Bowl with Grilled Salmon

This Mediterranean Quinoa Bowl with Grilled Salmon is a vibrant, nutrient-packed meal that fuels both body and mind. Ingredients:

  • 400g of quinoa

  • 500g of salmon fillets

  • 2 tablespoons of olive oil

  • 1 teaspoon of garlic powder

  • 1 teaspoon of paprika

  • 1 cucumber, diced

  • 200g of cherry tomatoes, halved

  • 100g of Kalamata olives, pitted

  • 1 red onion, thinly sliced

  • Juice of 1 lemon

  • Fresh parsley, chopped to garnish

  • Salt and pepper to taste


Instructions:

  • Rinse the quinoa under cold water and cook it according to package instructions. Once cooked, set aside to cool.

  • Preheat the grill to medium-high heat. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture onto the salmon fillets.

  • Grill the salmon for about 5-7 minutes on each side or until it flakes easily with a fork.

  • In a large bowl, combine diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives. Add the cooled quinoa to the salad mix.

  • Drizzle lemon juice over the quinoa salad and toss to combine. Adjust seasoning with salt and pepper if needed.

  • Serve the quinoa salad on plates, topped with grilled salmon and garnish with fresh parsley.
