Pan-Fried Tofu Sandwich

This pan-fried tofu sandwich with veggies and hummus is a delicious and satisfying plant-based meal packed with flavor and texture. Crispy, golden tofu is layered with fresh, crunchy vegetables and creamy hummus on hearty toasted bread, creating a perfect balance of protein, fiber, and healthy fats. Whether you're looking for a quick lunch or a nourishing dinner, this sandwich delivers a wholesome and energizing bite in every mouthful.

Ingredients:

  • 200g firm tofu

  • 4 slices whole wheat bread

  • 1 cup mixed salad greens

  • 1 medium tomato, sliced

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/2 bell pepper, sliced

  • 4 tablespoons hummus

  • 1 tablespoon olive oil

  • Salt and pepper to taste


Instructions:

  1. Press the tofu to remove excess moisture and cut it into slices.

  2. Heat olive oil in a pan over medium heat.

  3. Add the tofu slices to the pan and cook until golden brown on both sides, about 5-7 minutes.

  4. Season the tofu with salt and pepper while cooking.

  5. Toast the whole wheat bread slices until golden brown.

  6. Spread hummus on one side of each slice of bread.

  7. Layer the cooked tofu, salad greens, tomato, cucumber, red onion, and bell pepper on two slices of bread.

  8. Top with the other two slices of bread, hummus side down, to form sandwiches.

  9. Cut the sandwiches in half and serve immediately.
