Savory Mediterranean Pasta Bake

This Baked Ziti with Black Olives, Artichokes, Cherry Tomatoes, Sausage, Spinach, and Parmesan is a hearty, flavor-packed twist on a classic comfort dish. Each bite brings together the richness of savory sausage, the briny bite of olives, and the brightness of tender vegetables, all baked to perfection with melted cheese. It’s a satisfying, nutrient-dense meal that fuels both body and mind, perfect for sharing after a long day or refueling after a tough workout.

Baked pasta with cheese, vegetables, and meat in a clear dish on a dark countertop. Rich colors and textures create a hearty, appetizing look.

Ingredients:

  • 1 box penne pasta

  • 1 package sausage (usually 4 links), cut into coins

  • 2 cups cherry tomatoes, cut in halves

  • 2 cups artichoke hearts, cut in quarters

  • 1/3 cup black olive pieces

  • 2 cups spinach

  • 1 can cannellini beans

  • 1 bag parmesan cheese


Instructions:

  1. Cook pasta according to package. Usually 11-12 minutes.

  2. While pasta is cooking, cut sausage and vegetables. Preheat oven to 350 degrees F.

  3. Once cooked, drain pasta and mix in sausage and vegetable pieces in pasta pot. Mix half bag of cheese in.

  4. Pour the mix of pasta, sausage, and vegetables into large casserole dish. Top with cheese and bake for about 15 minutes or until cheese is melted.


Makes about 6 servings. About 32.5g protein and 8.5g fiber per serving.
