Three Bean and Spinach Crock Pot Stew

This hearty three-bean and spinach crockpot stew is a comforting, nutrient-rich meal perfect for busy days. Packed with protein from a trio of beans—kidney, black, and cannellini—along with tender spinach, it delivers fiber, vitamins, and antioxidants in every bite. Slow-cooked to perfection, the stew blends savory flavors with wholesome ingredients, making it a satisfying, easy-to-prepare dish that nourishes both mind and body.



Ingredients:

  • 15 oz can kidney beans

  • 15 oz can black beans

  • 15 oz can cannellini beans

  • 2-3 handfuls spinach

  • 4 cups vegetable broth

  • 2 large carrots, chopped

  • 2 large celery sticks, chopped

  • 1/4 yellow onion, chopped

  • Salt, pepper to taste


Instructions:

  1. Add all ingredients to your crock pot in the morning. Set heat to medium.

  2. Stir it occasionally, if you want.

  3. Serve about 8-10 hours later. Don't forget to make some toast to dip into stew.
