  • 1 1/2 cups whole wheat flour

  • 2 tsp baking powder

  • 1 1/2 tsp cinnamon

  • 1/2 tsp salt

  • 2 flax eggs

  • 3/4 cup brown sugar

  • 5 tbsp olive oil

  • 1 1/2 cups grated zucchini

  • Big handful of dark chocolate chips


  1. Preheat the oven to 400 degrees F.

  2. Mix all the dry ingredients in a bowl and whisk together.

  3. Add the wet ingredients one by one and mix until you have a smooth batter.

  4. Grease muffin tin and spoon batter into each cup.

  5. Cook for about 14-16 minutes.
