Chocolate Chip Banana Mini Muffins

Ingredients:
2 cups whole wheat flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons baking soda
1/2 cup brown sugar
1 flax egg (1 Tbsp ground flax and 2 Tbsp water mixed together)
1 cup water
3 tablespoons olive oil
1 cup chocolate chips
1 ripe banana
Instructions:
Preheat your oven to 400 degrees F.
In a large mixing bowl, combine all the ingredients. Mix until the batter is smooth and well blended.
Scoop the batter into mini muffin trays. This recipe makes about 24 mini muffins.
Bake in the preheated oven for 14 minutes or until golden brown.
Each mini muffin contains approximately 125 calories and 20 grams of carbohydrates.
