High-Protein Apple Cinnamon Walnut Muffins

This high-protein apple cinnamon walnut muffin serves as a nutrient-dense snack designed to provide post-run satiety and recovery. Formulated without protein powder, it uses naturally high-protein cottage cheese and eggs as its structural base. Whole wheat flour provides fiber, while walnuts contribute omega-3 fatty acids, crucial for mitigating training-induced inflammation. Diced apples add natural sweetness making this a perfect study snack or post-training snack.

Ingredients

  • 1/2 cup whole wheat flour

  • 1/2 cup greek yogurt

  • 1 large egg

  • 1/2 cup sweet apple, finely diced

  • 1/2 cup raw walnuts, chopped

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder

  • 1 teaspoon pure vanilla extract


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and line two muffin tin cups with silicone liners.

  2. In a small blender, process the cottage cheese until completely smooth.

  3. In a bowl, whisk the egg, smooth cottage cheese, and vanilla extract until well combined.

  4. Stir in the almond flour, ground cinnamon, and baking powder, mixing until a cohesive batter forms.

  5. Gently fold in the finely diced sweet apples and chopped walnuts.

  6. Divide the batter evenly between the two lined muffin cups.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool before consuming.


This recipe is about 840 calories, 40 grams protein, and 16 grams fiber.

If you make 2 muffins, each would be about 420 calories, 20 grams protein, 8 grams fiber.

If you make 12 mini muffins, each would be about 70 calories, 3.5 grams protein, and 1 gram fiber.
