Lemon Blueberry Protein Bites

A satisfying treat, these lemon blueberry protein bites are designed for sustained power during long ocean rescue shifts or taxing swimming blocks. Rolled oats and real dried blueberries deliver carbs to replenish glycogen lost during intensive exercise. Vanilla protein boosts the protein content for direct muscle support, while cashew butter and chia seeds provide sustained energy.

Ingredients
1/2 cup rolled oats
1 scoop vanilla protein powder (or however many scoops is 30 grams protein)
2 tbsp creamy cashew butter
1/4 cup unsweetened dried blueberries
1 tbsp chia seeds
1 tbsp pure maple syrup
1 tsp organic lemon zest
1 to 2 tsp water (if needed to bind)
Instructions
In a medium mixing bowl, thoroughly combine the rolled oats, vanilla protein, chia seeds, and fresh lemon zest.
Incorporate the cashew butter, maple syrup, and dried blueberries, stirring vigorously with a spatula.
If the mixture feels too crumbly, add water in 1-teaspoon increments until a cohesive dough forms.
Roll the dough between your palms into uniform balls.
Place on a tray lined with parchment paper and chill in the refrigerator for at least 30 minutes to set before packing in a cooler bag.
This entire recipe is about 610 calories and 42 grams protein.
If you roll out 6 bites they will each be about 100 calories and 7 grams of protein.
