Mint Chocolate Protein Mini Muffins

Designed specifically to satisfy an athlete's sweet tooth while maintaining recovery metrics, these mint chocolate protein mini muffins pack high-quality protein and incredible flavor into a compact snack. Whole wheat flour supply the rich dietary fiber necessary for digestive wellness, while mint extract provides a freshness to your chocolate treat. Ingredients

  • 2 scoops chocolate protein powder (or however many scoops is 60 g protein)

  • 1 1/2 cups whole wheat flour

  • 2 tbsp unsweetened cocoa powder

  • 2 eggs

  • 3 tbsp oil

  • 1 cup soy milk

  • 2/3 cups sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 3-5 drops mint extract


Instructions

  1. Preheat the oven to 400F and lightly grease muffin tin cups.

  2. In a medium container, whisk dry ingredients: protein, flour, cocoa powder, and baking powder.

  3. Stir in wet ingredients: eggs, sugar, oil, mint, and soy milk until a smooth, thick batter forms.

  4. Split the batter evenly between the 24 mini muffin cups.

  5. Bake for 12-15 minutes until a toothpick inserted in the center comes out dry, then let cool.


This recipe is about 2360 calories and 80 grams protein.

If you make 24 mini muffins they are 100 calories and 3.5 grams of protein each.
