One Pan Baked White Fish

Light, vibrant, and packed with brain-friendly nutrients, this one pan baked white fish is the perfect combination of flavor and function. With your choice of fish, it features beans or potatoes, juicy cherry tomatoes, zucchini, and onion — all topped with a drizzle of olive oil and a sprinkle of lemon, garlic, and paprika. Whether you're fueling up for a productive afternoon or looking for a nourishing dinner, this easy-to-make dish delivers a satisfying and wholesome boost.

Ingredients:

  • 6 oz white fish per person (I like tilapia, flounder, or halibut for this recipe)

  • 2 tablespoons olive oil

  • 1 medium sweet potato, cubed or 1 can kidney beans

  • 1 cup cherry tomatoes, halved

  • 1/2 zucchini, sliced and quartered

  • 1/4 medium onion, diced

  • Garlic powder

  • Paprika

  • Lemon juice


Instructions:

  1. Pre heat oven to 450 degrees F.

  2. Oil the baking dish and place fish in first. Drizzle lemon juice, garlic, and paprika on the fish fillets.

  3. Sprinkle the chopped vegetables over the fish. Add the potatoes or the beans.

  4. Cook for 40 minutes.


Approximately 35 grams protein, depending on type of fish or potatoes/beans.
