Three Bean Chili

A satisfying, congition-conscious dinner packed with soluble fiber to support digestive wellness and lean complete proteins for targeted muscle recovery. Easy hot meal at the end of the day, or a fast meal prep for weekly lunches. Don't forget toast!

Ingredients:
6 oz lean ground turkey
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1/2 cup butternut squash, peeled and cubed
1 cup crushed low-sodium tomatoes
1/2 large onion, diced
1/2 cup corn
1/2 cup celery, chopped
1 green bell pepper, chopped
2 cloves garlic, minced ( I admit I cheat and use a bunch of garlic powder instead)
1 tbsp chili powder
1 tsp ground cumin
Instructions:
In a large soup pot, cook the ground turkey over medium-high heat until fully browned, draining any excess grease.
Reduce the heat to medium and stir in the diced onion, chopped green bell pepper, and minced garlic, sautéing for 3 minutes.
Add the rinsed kidney, black, and pinto beans, followed by the cubed butternut squash and crushed low-sodium tomatoes.
Season with the chili powder and ground cumin, then cover and simmer on low-medium heat for 30 minutes until squash is tender before serving.
This total recipe is about 2160 calories, 200 grams of protein, and 55 grams of fiber.
If you divide this into 4 servings then each bowl is about 540 calories, 50 grams of protein, and 14 grams of fiber.
