Green bowl of beef stew with vegetables and parsley, served with sliced rustic bread on a wooden board and cloth napkin.

Ingredients:

  • 6 oz lean ground turkey

  • 1 can kidney beans, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 1 can pinto beans, drained and rinsed

  • 1/2 cup butternut squash, peeled and cubed

  • 1 cup crushed low-sodium tomatoes

  • 1/2 large onion, diced

  • 1/2 cup corn

  • 1/2 cup celery, chopped

  • 1 green bell pepper, chopped

  • 2 cloves garlic, minced ( I admit I cheat and use a bunch of garlic powder instead)

  • 1 tbsp chili powder

  • 1 tsp ground cumin

Instructions:

  1. In a large soup pot, cook the ground turkey over medium-high heat until fully browned, draining any excess grease.

  2. Reduce the heat to medium and stir in the diced onion, chopped green bell pepper, and minced garlic, sautéing for 3 minutes.

  3. Add the rinsed kidney, black, and pinto beans, followed by the cubed butternut squash and crushed low-sodium tomatoes.

  4. Season with the chili powder and ground cumin, then cover and simmer on low-medium heat for 30 minutes until squash is tender before serving.
