Tuna Salad with Mixed Greens, Quinoa, and Walnuts

Ingredients:

  • 1 can (5 oz) tuna in water, drained

  • 2 cups mixed greens (spinach, arugula, etc.)

  • 1/2 cup cooked quinoa

  • 1/4 cup walnuts, chopped

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup cucumber, diced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste


Instructions:

  1. In a large bowl, combine the drained tuna, cooked quinoa, mixed greens, cherry tomatoes, cucumber, and chopped walnuts.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.

  3. Pour the dressing over the salad and toss gently to combine all ingredients evenly.

  4. Serve immediately or chill in the refrigerator for 10 minutes before serving.
