Tuna Salad with Mixed Greens, Quinoa, and Walnuts

This tuna salad with mixed greens is a powerhouse of nutrition and flavor. Packed with lean protein from tuna, fiber-rich quinoa, and crunchy walnuts, this dish provides the perfect balance of energy and brain-boosting nutrients. Fresh mixed greens add a refreshing base, while a light vinaigrette brings everything together with a bright, tangy finish. Whether you're looking for a quick lunch or a wholesome dinner, this salad is a delicious and satisfying way to nourish both body and mind.

Ingredients:
1 can (5 oz) tuna in water, drained
2 cups mixed greens (spinach, arugula, etc.)
1/2 cup cooked quinoa
1/4 cup walnuts, chopped
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, diced
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions:
In a large bowl, combine the drained tuna, cooked quinoa, mixed greens, cherry tomatoes, cucumber, and chopped walnuts.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.
Pour the dressing over the salad and toss gently to combine all ingredients evenly.
Serve immediately or chill in the refrigerator for 10 minutes before serving.
