Farro and Tofu Bowl with Mushrooms, Peppers, and Spinach

  • 1 1/2 cups farro

  • 16 ounce block of firm tofu

  • 1 cup mushrooms

  • 1 cup peppers

  • 1 cup cooked spinach

  • Olive oil


  1. Boil water and cook farro for about 20 minutes and until tender. Drain excess water and set aside.

  2. Cut tofu into slices and bake for 30 minutes at 400F.

  3. Add a dash of olive oil to a frying pan and toss mushrooms, sliced peppers, and spinach. Cook until they begin to slightly brown.

  4. Add farro, tofu, and veggies together in a bowl. Top with your favorite sauce.
