Ingredients:
1 1/2 cups farro
16 ounce block of firm tofu
1 cup mushrooms
1 cup peppers
1 cup cooked spinach
Olive oil
Instructions:
Boil water and cook farro for about 20 minutes and until tender. Drain excess water and set aside.
Cut tofu into slices and bake for 30 minutes at 400F.
Add a dash of olive oil to a frying pan and toss mushrooms, sliced peppers, and spinach. Cook until they begin to slightly brown.
Add farro, tofu, and veggies together in a bowl. Top with your favorite sauce.
