This flavorful stir fry combines protein-packed tofu, hearty buckwheat noodles, and a colorful mix of vegetables for a nutritious, satisfying meal. The tofu adds a rich, plant-based protein source, while buckwheat noodles provide complex carbs and a unique nutty flavor. Paired with fresh veggies, this dish is both delicious and packed with essential nutrients. Stir Fry-day can be a superfood packed meal. This is a family favorite which we enjoy most Fridays.
Ingredients:
Bread crumbs
Sesame oil
Soy sauce
1 block of tofu
1 bag of frozen mixed veggies
2 ramen noodle cakes
Nutritional yeast
Instructions:
Cut tofu to the desired cube or shape. Toss in bread crumbs and sesame oil.
Bake for about 20-25 minutes at 400 degrees F.
Boil water for noodles. Cook until soft or follow package instructions.
Toss vegetables in a wok or pan with soy sauce and sesame oil. Once veggies are cooked, add in the cooked noodles.
Add the noodles and veggies to your favorite bowl. Add tofu cubes and top with a big sprinkle of nutritional yeast.
